This Spicy Garlic Parmesan Roasted Corn is a delicious side dish that combines the sweetness of corn with the bold flavors of garlic and parmesan cheese, perfect for any meal.
Ingredients
4 ears of corn, husked and cleaned
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 teaspoon red pepper flakes
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, combine the corn, olive oil, minced garlic, red pepper flakes, salt, and pepper.
3. Spread the corn mixture evenly on a baking sheet.
4. Roast in the preheated oven for 20-25 minutes, stirring halfway through.
5. Remove from the oven and sprinkle with grated Parmesan cheese.
6. Return to the oven for an additional 5 minutes until the cheese is melted and golden.
7. Garnish with fresh parsley before serving.
Notes
For extra flavor, add a squeeze of lemon juice before serving.
You can use frozen corn if fresh corn is not available.
