Description

Texas Twinkies are a delicious appetizer made with jalapenos stuffed with smoked brisket, cream cheese, and spices, wrapped in bacon and smoked to perfection.


Ingredients

10 large jalapenos

8 oz cream cheese, softened

2 cups smoked brisket, shredded

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1 lb bacon, cut in half

Salt and pepper to taste


Instructions

1. 1. Preheat your smoker to 225°F (107°C).

2. 2. Cut the jalapenos in half lengthwise and remove the seeds.

3. 3. In a bowl, mix the cream cheese, smoked brisket, garlic powder, onion powder, smoked paprika, salt, and pepper.

4. 4. Stuff each jalapeno half with the brisket mixture.

5. 5. Wrap each stuffed jalapeno with a half slice of bacon and secure with a toothpick.

6. 6. Place the jalapenos on the smoker and cook for 2 hours or until the bacon is crispy.

7. 7. Remove from the smoker and let them cool for a few minutes.

8. 8. Serve warm and enjoy!


Notes

For extra flavor, you can add shredded cheese to the filling.

Adjust the spice level by leaving some seeds in the jalapenos.

These can also be cooked on a grill if a smoker is not available.
