Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 (8 oz) packages cream cheese, softened
1 cup pumpkin puree
3 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/2 cup sour cream
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a bowl, mix graham cracker crumbs and melted butter until combined.
3. Press the mixture into the bottom of a greased 9×13 inch baking dish.
4. In a large bowl, beat cream cheese and sugar until smooth.
5. Add pumpkin puree, eggs, vanilla, and spices; mix until well combined.
6. Pour the pumpkin mixture over the crust and smooth the top.
7. Bake for 30-35 minutes or until set.
8. Let cool, then refrigerate for at least 2 hours before cutting into bars.
9. Serve chilled and enjoy!
