Ingredients

– 1 cup mascarpone cheese

– 1 cup heavy cream

– 1/2 cup pumpkin puree

– 1/2 cup powdered sugar

– 1 teaspoon vanilla extract

– 1 teaspoon pumpkin spice

– 1 cup brewed coffee, cooled

– 2 tablespoons coffee liqueur

– 24 ladyfingers

– Cocoa powder for dusting


Instructions

1. 1. In a bowl, whisk together mascarpone cheese, heavy cream, pumpkin puree, powdered sugar, vanilla extract, and pumpkin spice until smooth.

2. 2. In another bowl, combine brewed coffee and coffee liqueur.

3. 3. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.

4. 4. Layer half of the soaked ladyfingers in the bottom of a serving dish.

5. 5. Spread half of the pumpkin mascarpone mixture over the ladyfingers.

6. 6. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.

7. 7. Cover and refrigerate for at least 4 hours, or overnight for best results.

8. 8. Before serving, dust the top with cocoa powder.


Notes

For a richer flavor, use freshly brewed espresso instead of regular coffee.

You can also add a sprinkle of nutmeg for extra spice.
