Description

Ingredients

Scale

200g dark chocolate, chopped

3 large eggs, separated

1/4 cup granulated sugar

1/2 cup heavy cream

1 teaspoon vanilla extract

Zest of 1 orange

Pinch of salt


Instructions

1. Melt the dark chocolate in a heatproof bowl over simmering water.

2. In a separate bowl, whisk the egg yolks with sugar until pale and creamy.

3. Stir the melted chocolate into the egg yolk mixture.

4. In another bowl, whip the heavy cream with vanilla extract until soft peaks form.

5. Fold the whipped cream into the chocolate mixture gently.

6. In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.

7. Fold the egg whites into the chocolate mixture until no white streaks remain.

8. Add the orange zest and gently mix.

9. Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.


Notes

For a stronger orange flavor, add a splash of orange liqueur.
