A delightful medley of potatoes infused with zesty garlic and fresh herbs, perfect as a side dish.
Ingredients
2 pounds baby potatoes
4 cloves garlic, minced
3 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Preheat the oven to 400 degrees F.
2. Wash and halve the baby potatoes.
3. In a large bowl, combine the potatoes, minced garlic, olive oil, oregano, thyme, salt, and pepper.
4. Toss until the potatoes are well coated.
5. Spread the potatoes in a single layer on a baking sheet.
6. Roast for 25-30 minutes, or until golden and tender, stirring halfway through.
7. Remove from the oven and garnish with fresh parsley before serving.
Notes
For extra flavor, add a squeeze of lemon juice before serving.
