Description
A refreshing and nutritious quinoa salad with zesty garlic and herbs, perfect as a side dish.
Ingredients
1 cup quinoa
2 cups water
1/4 cup olive oil
3 cloves garlic, minced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, diced
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
Juice of 1 lemon
Salt and pepper to taste
Instructions
1. Rinse the quinoa under cold water.
2. In a pot, combine quinoa and water, bring to a boil.
3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
4. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
5. In a large bowl, whisk together olive oil, garlic, lemon juice, salt, and pepper.
6. Add the cooked quinoa, tomatoes, onion, parsley, and cilantro to the bowl and mix well.
Notes
This salad can be served warm or chilled.
Feel free to add your favorite vegetables or proteins for extra nutrition.
