Description

These zesty garlic herb roasted potatoes are crispy on the outside and fluffy on the inside, infused with garlic and fresh herbs for a delightful side dish.


Ingredients

2 pounds baby potatoes

4 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste


Instructions

1. Preheat the oven to 425 degrees F.

2. Wash and halve the baby potatoes.

3. In a large bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and pepper.

4. Add the potatoes to the bowl and toss until well coated.

5. Spread the potatoes in a single layer on a baking sheet.

6. Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.


Notes

For extra crispiness, broil the potatoes for the last 2-3 minutes of cooking.
