These Zesty Lemon Garlic Roasted Potatoes are a perfect side dish, bursting with flavor and easy to prepare.
Ingredients
2 pounds baby potatoes
3 tablespoons olive oil
4 cloves garlic, minced
1 lemon, zested and juiced
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Preheat the oven to 425°F (220°C).
2. Wash and halve the baby potatoes.
3. In a large bowl, combine olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and pepper.
4. Add the halved potatoes to the bowl and toss until well coated.
5. Spread the potatoes in a single layer on a baking sheet.
6. Roast in the preheated oven for 25-30 minutes, or until golden and crispy, tossing halfway through.
7. Garnish with fresh parsley before serving.
Notes
For extra crispiness, broil the potatoes for the last 2-3 minutes of cooking.
