Description
A refreshing salad featuring quinoa, fresh herbs, and zesty lemon dressing, perfect for lunch.
Ingredients
1 cup quinoa
2 cups water
1/2 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup parsley, chopped
1/4 cup mint, chopped
1/4 cup feta cheese, crumbled
Juice of 1 lemon
2 tablespoons olive oil
Salt and pepper to taste
Instructions
1. Rinse quinoa under cold water.
2. In a pot, combine quinoa and water, bring to a boil.
3. Reduce heat, cover, and simmer for 15 minutes.
4. Remove from heat and let it sit for 5 minutes.
5. Fluff quinoa with a fork and let it cool.
6. In a large bowl, combine cooled quinoa with tomatoes, cucumber, onion, herbs, and feta.
7. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
8. Pour dressing over salad and toss to combine.
9. Serve chilled or at room temperature.

Great for meal prep! Can be stored in the fridge for up to 3 days.
