Ingredients
– 1 lb frozen French fries
– 1 cup pumpkin puree
– 1 can (15 oz) black beans, drained and rinsed
– 1 cup corn kernels, fresh or frozen
– 1 tsp chili powder
– 1 tsp cumin
– 1 tsp garlic powder
– 1 cup shredded cheese (cheddar or your choice)
– 1/2 cup sour cream
– 1/4 cup green onions, sliced
– Salt and pepper to taste
