Ingredients
4 boneless, skinless chicken breasts
1 ripe mango, diced
1/2 red onion, finely chopped
1 jalapeño, seeded and minced
1/4 cup fresh cilantro, chopped
Juice of 2 limes
Salt and pepper to taste
1 tablespoon olive oil
Instructions
1. Preheat the grill to medium-high heat.
2. In a bowl, combine diced mango, red onion, jalapeño, cilantro, lime juice, salt, and pepper to make the salsa.
3. Brush chicken breasts with olive oil and season with salt and pepper.
4. Grill chicken for 6-7 minutes on each side or until fully cooked.
5. Remove chicken from the grill and let it rest for a few minutes.
6. Top each chicken breast with the mango salsa before serving.
Notes
For extra flavor, marinate the chicken in lime juice and spices for 30 minutes before grilling.
